Soft Pumpkin Chocolate Chip Cookies (Gluten free Option)

I can not believe thanksgiving is in just a few days, tis the season for everything pumpkin! Even if you aren’t a huge fan of pumpkin flavor things I’m sure you will love these chocolate chip cookies! They are easy to make and nice and soft, I love soft cookies! If you are anything like me you will be finding yourself sneaking one every time you walk past the table, hope you enjoy!

Prep time: 1 hour and 25 min (*chill time)

Cook time: 8-12 min

Servings: 24 cookies

What you need:

▢½ Cup (1 Stick) Butter, *Softened (NOT melted)

▢¼ Cup Light Brown Sugar

▢½ Cup White Sugar

▢1 Teaspoon Vanilla Extract

▢6 Tablespoons Pumpkin Puree (NOT Pumpkin Pie Filling)(*if you are using GF flour then use 7.5 tbsp. of pumpkin)

▢1 ½ Cups All-Purpose Flour or (I use Bob’s Red Mill 1 o 1 Gluten Free Baking Flour) or (King Arthur, Measure for Measure Flour, Certified Gluten-Free)

▢¼ Teaspoon Salt

▢¼ Teaspoon Baking Powder

▢¼ Teaspoon Baking Soda

▢1 and ½ Teaspoons Cinnamon

▢¼ Teaspoon Nutmeg

▢¼ Teaspoon Cloves Ground

▢1 Cup Semi Sweet Chocolate Chips

How to make them:

1. In a large bowl cream softened butter(not melted), and sugars together. Stir in vanilla and pumpkin. Set aside.

2. In a medium bowl, whisk flour, salt, baking powder/soda, and spices until combined.

3. Gradually add dry ingredients into wet ingredients a little at a time. Stir until just combined, do NOT over mix!

4. Fold in chocolate chips.

5. Chill dough for 1 hour. (Do NOT skip this step or your cookies will spread too much).

6. Preheat over to 350 degrees F.

7. Roll dough into medium size balls (around 1.5-2 tablespoons each). Bake for 8-12 minutes. *Check them at 8 minutes, they will be soft but readiness will depend on how gooey you like them, check again at 10 minutes if you want a firmer cookie. Also, if using gluten free flour they bake differently, normally 10-12 minutes.

8. Cool on pan for 10 additional minutes. Remove to wire racks to cool completely.
